Akashi's Junmai Daiginjo
sake uses the highest quality rice and a lengthy brewing process to produce some Japan's finest sake. Polishing away the outer kernel of the rice grain used in production results in a more crisp and rich sake. The Junmai Daiginjo grains are polished to 40% of their original mass. This shows complex lemon and bitter orange flavours, with a touch of grass, fresh sage and melon.
